Water Conditions

Steam Systems:

I am sure some folks use steam cookers in their kitchens. All these units have a water reservoir and that water has to get hot and send steam into the cooking compartment. The steam generator or boiler distills the water in order to make steam. When the steam is used it leaves minerals behind, which can damage the steam generator. These minerals then solidify as scale. If not kept clean, the unit can fail in the middle of a lunch or dinner rush. There are certain steps that you can do to decrease your potential unwanted downtime:

  1. Give a water sample to a qualified "Authorized Service Company" who will make recommendations to reduce harmful concentrations of minerals if present.

  2. If you have a water softener or filter cartridge(s) check them on a regular basis (Twice a month).

  3. When daily use is complete, the tank should be drained or blown down and emptied. At least every 6 months a Qualified Service Technician should perform a steam generator (boiler) inspection and thorough cleaning of the inside of the boiler.

If the above steps are taken your money will not be wasted replacing damaged equipment due to lack of Steamer Preventive Maintenance.

  1. Over 90% of all steam cooker problems are caused by scale.

  2. According to the United States Bureau of Standards:

    • 1/16" of scale requires 15% more energy
    • 1/8" of scale requires 20% more energy
    • 1/4" of scale requires 39% more energy
    • 3/8" of scale requires 55% more energy
    • 1/2" of scale requires 70% more energy

  3. A qualified "Authorized Service Company" can help provide solutions before a situation becomes a large expensive problem.
